Whipping cream Ingredients:
-16 oz carton Whipping cream
-2 tsp maple syrup (any sugar will do, but we prefer using natural sugars)
-2 cups of unbleached flour
-4 tsp baking powder
-1/2 tsp sea salt
-1/2 cup coconut sugar
-1/2 olive oil
-2 cups whole milk
-1 tsp vanilla
-Blueberries (or any berries)
Whipping Cream Method:
Whip your whipping cream with the maple syrup in a cold bowl. We put our bowl and mixers in the freezer for 15 minutes.
Mix the dry ingredients together in a large bowl.
In separate bowl, separate egg whites and beat until stiff peaks form.
Mix together the egg yolks, milk, oil and vanilla.
Add to dry ingredients and mix well.
Add egg whites.
Oil your waffle iron and cook all your waffles.
Let all the waffles cool down on a cooling rack. When they are cooled and crunchy, mount your tower by placing some whipped cream and blueberries between each layers with a nice pile on top.
Voila! Belgian waffles.
