I absolutely love skewers! When I was a kid, my family would only go to restaurants for very special occasions. My mom and I would always order two different skewers and share.
I think the presentation is what made them so festive to me and it was always fun to fork off all the pieces onto my plate.
All grown up now and I still find them so fun, beautiful and delicious!
Ingredients:
-Extra firm tofu cut in 1 inch cubes
-Zucchini cut in 1 inch pieces
-Red onion cut in 1 inch pieces
-Small brussel sprouts
-Large cauliflower florets
-Cherry tomatoes
Method:
Place your tofu cubes into a glass container.
Cover with a really generous portion of BBQ sauce and mix carefully as to not break the tofu.
Cover with a lid and store in the refrigerator. The longer you marinate your tofu, the better. I recommend at least 24 hours. Flip the container a few times during the marination.
I like to precook the cauliflower and the brussel sprouts in the oven at 375 °F for about 10 minutes. Add a bit of avocado oil and salt.
Thread all of your ingredients onto the skewers.
Cook on a BBQ or on a grill pan on medium high for about 5 minutes each side.
Serve on rice or with these delicious Hasselback potatoes with a side of salad.
