I posted about how to make your own coconut yogurt a couple of weeks ago and I have been enjoying the result, but coconut has such a precise and strong taste that I was craving something a bit more neutral. Either to eat with oatmeal and fruit or to make sauces and dressing out of it. This cashew yogurt is absolutely perfect for that. The texture is like greek yogurt, but with a subtle taste that doesn't overpower.
-2 Cups cashews soaked overnight and drained
-1 1/4 Cups filtered water
-Small pinch of sea salt
-6 Probiotics capsules of 6 billion active cell
Place your cashews, water and salt in a high power blender.
Blend on maximum for about 45 seconds.
Empty the probiotics capsules on top.
Blend on low for 10 seconds.
Transfer to a bowl.
Cover with aa cotton cloth.
Store at room temperature in a dark corner for 12 to 24 hours.
Mix well and store in the fridge. It will be good for about a week.
Voila! Homemade cashew yogurt.
